Millions of the global population are now suffering from food-caused health issues. To solve those health and hunger issues, there is a greater need to produce protein- and micronutrient-rich whole foods. In the late 1960s, the “Green Revolution” increased the production of cereals (rice, wheat, and maize), solving world hunger. However, today, millions of people are suffering from calorie overnutrition, such as being overweight, and micronutrient undernutrition. Global health experts are urging a second revolution—or more of a “greener” revolution—to provide nutrient-rich whole foods. Among all crops, pulses are uniquely positioned from nutritional profiles (20-25% protein; 10-15% prebiotic carbohydrates, 5% micronutrients, and 1-2% fats), and they are a primary dietary component for many communities worldwide. Modern nutritional biofortification, i.e., breeding and selecting pulse cultivars with the highest yields and nutrition, provides smallholder farmers with production benefits and strengthens their food systems. This presentation will show the road map to incorporate organic pulse biofortification research to enhance organic pulse crop production and reintroduce tesse nutritious, healthy foods to our communities.
