For the evaluation of the chemical and physical characteristics of milk and dairy products, in addition to the usual basic equipment, such as ovens, muffle furnaces, scales, pH-meters and centrifuges, the following instruments are available: automatic distiller and titrator for nitrogen determination; gas chromatographs with FID detector; two gas chromatographs coupled to single quadrupole mass detector; HPLC systems with different detectors: UV/Vis, fluorimetric, IR, ELSD, and an HPAEC/PAD ion chromatograph; atomic absorption spectrometer; UV/vis spectrophotometer; capillary electrophoresis; gel electrophoresis; two lacto-dynamographs.
