Microbiological analysis of dairy products and foods using traditional methods and molecular techniques. Expertise in the isolation, identification and characterization of bacteria of dairy interest, lactic acid bacteria, spoilage bacteria, food pathogens. Analysis and development of starter cultures for dairy products and functional foods. Microbial ecology studies to evaluate the origin and behavior of microorganisms from food processing to ripening. Implementation and maintenance of a collection of lactic acid bacteria and bacteriophages of dairy interest.

The laboratory is equipped with an epifluorescence microscope, a phenotyping platform (Biolog Phenotype MicroArrays), PCR and real-time PCR thermal cyclers, nucleic acid sequencer, nucleic acid fragment analyzer (QIAxcel) and bioinformatics packages (BIONUMERICS) for the analysis of molecular and phenotypic data.
