Laboratory of cheesemaking technology, Lodi
The laboratory deals with issues related to manufacturing technology for the production of traditional and industrial cheeses. Experimental cheese-making on a pilot and laboratory scale are carried out to evaluate and validate new technological solutions (starter cultures, coagulants, additives, etc.) and for the development of innovative products.
