Analysis Laboratory of animal products include a chromatography laboratory equipped with: two HPLC UV/VIS and DAD fluorescence for liquid chromatography and a GC/FID and a GC/MAS for gas-chromatography; microwave oven for mineralization step; Atomic Absorption Spectroscopy (AAS) and Graphite Furnace atomic absorption spectrometry (GF AAS); spectrophotometric laboratory with FT-NIR, Minolta visible colorimeter, spectrofluorometer and dynamometer. The laboratory is also dedicated to extraction and purification of molecules from beef meat and fish, milk and dairy products, and is equipped with rotavapor, maria-bath, analytical balances, centrifuges, pHmeter, ultra turrax homogenizer, gel and zymography-electrophoresis, TLC and lactodynamometer.

This equipment allows the analysis of milk, meat, fish and derivatives micro- and macro constituents. In particular, for the protein fraction it’s possible to determine free and essential amino-acids, peptides and enzymes; for the lipid fraction it’s possible to analyze free fatty acids, neutral and polar fats and cholesterol. Analysis of micro and macro-minerals and water-soluble and fat-soluble vitamins, analysis of products of lipid and protein oxidation products (malondialdehyde, nonenal, carbonyl compounds, thioles and cholesterol oxides) for milk, meat, fish and derivatives are carried out. For all animal products it’s possible to determine the antioxidant activity and some indexes of milk thermal treatment. For rennet, proteolytic enzymes content and coagulant and lipolytic activity are also determined.
