This laboratory carries out analyses for the evaluation of the chemical, physical, nutritional and sensorial characteristics of both fresh, stored and/or processed agricultural products. The laboratory is equipped with: gas chromatography-mass spectrometry (quadrupole), gas chromatography with static headspace sampler (GC-HS), Fast-GC, gas chromatography-olfactometry (GC-O) and electronic nose (volatile compounds, aromas, odorous patterns ); high pressure liquid chromatography (HPLC, 10 systems), electrophoresis, UV spectrophotometry and electronic paramagnetic resonance (nutraceutical composition and antioxidant and anti-radical activity); Micro Stable System with electronic ear, Instron dynamometer, fluorescence microscopy, DSC, aw-meter, (texture and rheological measurements), sensory lab equipped with six computerized individual booths, mobile laboratory for sensory analysis (sensory test - panel test , consumer test).
