The laboratory is a cutting-edge example for the creation of representative and statistically valid databases, according to chemometric classification methods, useful for the implementation of traceability systems, tracking, protection and enhancement of the main typical fruit and olive productions.

These classification systems are mainly applied to European-label products, both organic and conventional, and their derivatives, whose geographical origin is identified by the combined use of metabolic profiling and chemical, isotopic and spectroscopic parameters, coupled with multivariate statistical analysis techniques. DNA analysis methods are also applied, developing new markers and protocols for the traceability/trackability of oil, fruit and their derivatives.
